Ate’s Patatim
January 16, 2007Every family has tradition for every occasion. Mine has to have patatim for Christmas. It started with my late Dad who starts cooking it one day before Christmas. Made from a secret recipe which he developed, he passed it on to my sister before he died (siempre naman no). He didn’t pass it on to me ’cause I wasn’t really into cooking the time he was still alive.
Six years after daddy’s death, Ate finally taught me his recipe for the dish. I am honor-bound not to disclose the ingredients, it is after all, a family secret recipe. Let me just say that once you bite into the soft gelatinous meat, and taste the sauce, you are completely surrendering to the dish. I got to learn how to cook it. It was a good replication of Ate’s dish but because the pata I got has less fat, it was not as good as my sister’s. nevertheless, it would make anybody’s toes curl in delight. Not good enough to cause tiny explosions in the brain though. god knows what would happen if I serve the dish to piolo p.
note to self: DO NOT use chili powder next time

peach, ignore him/her. s/he was just disappointed that I did not include the recipe. I have posted the recipe since then.
